- What you’ll need:
- 1 TBSP coconut oil
- ¾ pound ground beef
- ½ Medium Head of Cauliflower, riced or 1 package of Riced cauliflower
- ½ medium yellow onion
- 2 cloves garlic, minced
- 2 tsp chili powder
- ½ tsp ground cumin
- ½ c no sugar added Tomato sauce
- To taste sea salt and black pepper
- 2 large yellow, red or orange bell peppers, halved lengthwise and seeded
- chopped scallions for serving
Instructions:
- Preheat oven to 350 degrees
- In a large skillet, heat e oil over medium-high heat. Add the ground beef and cook stirring occasionally to break up the meat, until no longer pink.
- Reduce the heat to medium and add the cauliflower and onion, cook, covered, for 6-8 minutes, stirring occasionally.
- Add the garlic, chili powder and cumin. Stir to mix well.
- Add the tomato sauce and stir to combine. Season with salt and pepper. Remove from the heat.
- Arrange the peppers, cut-side up, in a baking dish. Fill the peppers with the meat mixture. Bake, uncovered, for 20-3- minutes or until the peppers have softened. Serve topped with scallions.
- Serves 4. ( 3 0z of meat and approximately 1 cup of vegetables)
