Taco Stuffed Peppers
What you'll need: 1 TBSP coconut oil ¾ pound ground beef ½ Medium Head of Cauliflower, riced or 1 package of Riced cauliflower ½ medium yellow onion 2 cloves garlic, minced 2 tsp chili powder ½ tsp ground cumin ½ c no sugar added Tomato sauce To taste sea salt and black pepper 2 large yellow, red or orange bell peppers, halved lengthwise and seeded chopped scallions for serving Instructions: Preheat oven to 350 degrees In a large skillet, heat e oil over medium-high heat. Add the ground beef and cook stirring occasionally to break up the meat, until no longer pink. Reduce the heat to medium and add the cauliflower and onion, cook, covered, for 6-8 minutes, stirring occasionally. Add the garlic, chili powder and cumin. Stir to mix well.…
