Taco Stuffed Peppers

  • What you’ll need:
  • 1 TBSP coconut oil
  • ¾ pound ground beef
  • ½ Medium Head of Cauliflower, riced or 1 package of Riced cauliflower
  • ½ medium yellow onion
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • ½ tsp ground cumin
  • ½ c no sugar added Tomato sauce
  • To taste  sea salt and black pepper
  • 2 large yellow, red or orange bell peppers, halved lengthwise and seeded
  • chopped scallions for serving

Instructions:

  • Preheat oven to 350 degrees
  • In a large skillet, heat e oil over medium-high heat. Add the ground beef and cook stirring occasionally to break up the meat, until no longer pink.
  • Reduce the heat to medium and add the cauliflower and onion, cook, covered, for 6-8 minutes, stirring occasionally.
  • Add the garlic, chili powder and cumin.  Stir to mix well.
  • Add the tomato sauce and stir to combine.  Season with salt and pepper.  Remove from the heat.
  • Arrange the peppers, cut-side up, in a baking dish.  Fill the peppers with the meat mixture. Bake, uncovered, for 20-3- minutes or until the peppers have softened.  Serve topped with scallions.
  • Serves 4.  ( 3 0z of meat and approximately 1 cup of vegetables)
